Romanseco is my last veggie of the 77! Have eaten others off the list; hoping next year they will broaden the list one more!!

Yuca is SO GOOD!!! What a fun surprise! I cooked it in a homemade meat ragu and everyone loved the texture it added to the dish!

I was a little intimidated by kohlrabi but turns out it was great! When raw it tastes EXACTLY like the broccoli stem! So good!

Found a bunch of the more unique veggies at Sprouts! Getting ready to kill the challenge this week 🙂
