- 1/4 cup raisins
- carrot medium
- 1/4 cup spinach washed and packed in
- 4 slices whole wheat bread
- 1/2 cup hummus prepared or see VegOut! Hummus recipe
- Spread hummus on one side of each slice of bread,
- Working with two slices of bread, evenly sprinkle raisins over hummus,
- Add layer of grated carrot and spinach,
- Top with remaining two slices of bread.
