Working in the Test Kitchen at EatingWell means I get to incorporate a lot of vegetables that I wouldn’t usually buy into my day. One recipe that we’ve been working on is a Summer Vegetable Noodle Bowl with Peanut Sauce that includes red bell peppers, yellow bell peppers, beets, cabbage and carrots. It should be up on the website soon.
Another way I’ve been getting more veggies into my diet is during breakfast. I like to add baby spinach, tomatoes, mushrooms, leeks or onions into my egg scrambles in the morning. Or, if I have leftover cooked vegetables from the night before, such as roasted Brussels sprouts or sautéed kale, I’ll stir those in with a touch of hot sauce and cheese. Yum!
