We had a busy day yesterday making stir fry with some colorful bell peppers and preparing for today’s meal of South Western Chicken Wrap stuffed with a delicious black bean and corn salad!!

Planning to head to Rodeo Houston tonight. Still going to get my veggies in with roasted corn on the cob!

When I’m on the go I look for simple salad solutions or soups. Today’s weather is perfect for veggie filled Tortilla Soup chalked with roasted corn, fresh tomato, cilantro and chunks of avocado. Yummmmm!

It warmed up outside and in Keegan Kitchen! Today was corn on the cob and steamed broccoli in cheese sauce with our Hearty Winter Chili!
