Working in the Test Kitchen at EatingWell means I get to incorporate a lot of vegetables that I wouldn’t usually buy into my day. One recipe that we’ve been working on is a Summer Vegetable Noodle Bowl with Peanut Sauce that includes red bell peppers, yellow bell peppers, beets, cabbage and carrots.
