I think hominy is corn. Yummy…I used to cook it up with lemon juice and butter. Now I don’t eat it because the only way I know to eat is from a can. No to the can!
I made it! Tomorrow will be having sweet & smooth veggie blend….it has spinach, zucchini, celery, cucumber, broccoli and parsnip. Do I get to mark all of those off, or just one a day?
1 cup coconut milk
large handful of spinach
1 frozen banana (cut into pieces is easier)
1/2 tsp vanilla
flavor to taste with peppermint extract or if you have a brand that you trust enough to ingest…1-3 drops peppermint essential oil.
Thanks for joining with us Janine. There are several INL 2015 Alumni (Addie, Trisha, Alix, Anisha & Ana) plue Lia is in INL this year. I am saving up a leftover piece of zucchini lasagna for tomorrow. We assume the counter will start over tomorrow but we don’t know for sure. 🙂
So the counter restarted, and when I signed on it said veg of the day was cauliflower. I don’t have any and we ate cauliflower two days ago. Do we have to eat the veg of the day for it to count, or can we eat our own choice. I already made a kale and quinoa salad for today as my own veg of the day…
Yes…the challenge is to eat 30 veggies within 30 days in March. No…you do not have to eat the veggie of the day and you can eat more than 1 veggie a day.
