On the first day Leisa Holland-Nelson ate a salad for lunch that contained 14 vegetables – kale, bok choy, spinach, romaine, tomato, celery, carrots, mushrooms, artichokes, edamame, chickpeas, radish, Brussels sprouts and cucumber. “I eat this salad almost every day,” says Holland-Nelson, who owns a web and mobile development company.

“Sometimes I just run by the grocery store and put together all these veggies from the salad bar.” She says at-home meals such as a pasta dinner made with three types of squash and a steamed veggie combo containing broccoli, cauliflower and beets also helped her tackle the Veg Out! VegOut! Helps Build Smart Habits for Teachers and Students

Over 50 Houston-area schools are getting into the groove of VegOut! 2015. This week we want to share two stand-outs: VegOut-inspired meals for teachers were held at Lyons Elementary (Houston ISD) and Pine Shadows Elementary (Spring Branch ISD), which has also conducted VegOut!-themed classes for students. Soccer Star Brian Ching Launches VegOut! 2015

Gracie & Brian ChingNearly 100 gathered for breakfast at Canopy restaurant in Houston on Wednesday morning, February 25 to celebrate the launch of VegOut!Challenge 2015. Celebrity emcee, Brian Ching talked about his experience with Recipe for Success Foundation at Rodriguez Elementary School where he was impressed by the children’s enthusiasm for and knowledge of fresh produce. He shared that he was personally looking forward to the challenge as a way to expand his vegetable repertoire and that especially after retiring as Captain of the Houston Dynamo, he has to be particularly mindful of his diet.
