- 1 cup carrots peeled and grated
- 1/3 cup fresh cilantro chiffonaded
- 1/4 cup rice vinegar
- 2 tablespoons olive oil extra virgin

- Prepare mise en place.
- Place cabbage, carrots, and cilantro in a large mixing bowl.
- In a separate small bowl, whisk together vinegar, oil and salt.
