Recipe inspired by Sylvia Fountaine, Feasting at Home
- 4 cups watermelon 1 inch cubes
- 1 cup cucumber diced
- 3 scallions cut thin, at a diagonal
- 1/2 cup cilantro chopped
- 1 jalapeño pepper deseeded & sliced
- 2 shiso leaves chiffonade
- 1 teaspoon sesame seeds
- salt & pepper to taste
- 1/2 teaspoon ginger finely minced
- 1 1/2 tablespoon fresh lime juice
- 1 1/2 tablespoon honey or agave
- 1 tablespoon toasted sesame oil
- 2 teaspoon soy sauce
- Place watermelon, cucumber, scallions, and cilantro in a medium bowl.
- Mix dressing ingredients together in a small bowl then pour over watermelon salad.
- Gently toss. Add salt and pepper to taste
- Garnish with jalapeño, shiso ribbons and toasted sesame seeds
