  1. Preheat oven to 400°F. In large cast iron skillet, heat oil over medium heat. Add garlic and onion and cook, stirring often, until caramelized
  2. Stir in kale, sweet peppers, crushed red pepper, 2 tbsp of water and heavy pinch salt
  3. Add mustard greens and 2 tablespoons water. Cover and cook until slightly wilted
  4. Slowly stir in the cream. Make 5 wells in the vegetable mixture and crack an egg into each.
  5. Bake for 5 minutes, until the whites are just set. Season with salt accordingly
  6. Garnish with grated lemon zest and Parmesan. Enjoy!

  1. Trim stalk ends of the green beans and snap peas. Blanch green beans in large pot of boiling water for 3-4 minutes, drain and place them directly into bowl with ice water to stop them from cooking further. Drain and set aside
  2. Repeat with the sugar snaps, only blanch one minute
  3. Roughly chop almonds, toast slightly on skillet or in the oven
  4. In small mixing bowl, whisk together olive oil, garlic, orange zest and salt & pepper. Set dressing aside
  5. Combine baby mustard greens, green beans, snap peas, and hot peppers in large mixing bowl then toss with dressing
  6. Garnish with almonds and chives, seasoned as needed with sea salt and pepper. Enjoy!

  1. Heat a large Dutch oven over medium to high heat. Coat the bottom with olive oil, then add the onion, carrots, and celery and cook until crisp-tender.
  2. Add the lentils, potatoes and chicken or vegetable stock, starting out with about 6 cups. Stir in the wine. Add the bay leaf and thyme. Let come to a boil, then reduce heat to a simmer. Cook uncovered until lentils are tender and done, about 1 1/2 hours. *Be careful to watch the liquid level and add more stock as needed. Stir occasionally. Add salt and pepper to taste.
  3. When lentils are done, mash the potatoes against the side of the pan with a spoon then stir them. This will make it creamy. Stir in the turnip and mustard greens. Let come to a boil again, then simmer for about 30 minutes.
  4. Top with a scoop of brown rice and sprinkle with fresh parsley. Enjoy!
Recipe Notes

We suggest that replacing white rice with brown rice is a healthier option.
