  1. Bring ½ cup water to simmer in a large saucepot over medium-high heat
  2. Add onion and cook about 5 minutes or until translucent
  3. Add peppers then stir in ginger and cook 1 minute
  4. Add remaining 8 cups water, peas and sweet potato cubes to saucepot and bring to a boil
  5. Reduce heat to a simmer, cover and simmer for 1 hour
  6. Uncover and continue to simmer 15 minutes
  7. Carefully puree soup with a hand held immersion blender or in batches in a food processor until smooth & creamy
  8. Garnish with pumpkin seeds. Enjoy!

  1. Heat a large Dutch oven over medium to high heat. Coat the bottom with olive oil, then add the onion, carrots, and celery and cook until crisp-tender.
  2. Add the lentils, potatoes and chicken or vegetable stock, starting out with about 6 cups. Stir in the wine. Add the bay leaf and thyme. Let come to a boil, then reduce heat to a simmer. Cook uncovered until lentils are tender and done, about 1 1/2 hours. *Be careful to watch the liquid level and add more stock as needed. Stir occasionally. Add salt and pepper to taste.
  3. When lentils are done, mash the potatoes against the side of the pan with a spoon then stir them. This will make it creamy. Stir in the turnip and mustard greens. Let come to a boil again, then simmer for about 30 minutes.
  4. Top with a scoop of brown rice and sprinkle with fresh parsley. Enjoy!
Recipe Notes

We suggest that replacing white rice with brown rice is a healthier option.

  1. Pre-heat oven to 400 degrees
  2. Coat sweet potatoes and garlic cloves with olive oil, salt, & pepper. Place in a single layer on a baking sheet. Roast 25 minutes, until tender and mildly caramelized
  3. Heat a heavy-bottomed pot over medium heat. Add remaining olive oil & minced shallot. Cook until tender and fragrant, stirring regularly
  4. Fold in kale, followed by the roasted sweet potatoes and garlic cloves
  5. Add veggie stock and heavy cream or coconut milk. Simmer for 5-7 minutes
  6. Blend soup with immersion blender or in blender until smooth
  7. Garnish with sliced scallions and serve with warm, crusty bread. Enjoy!

  1. Preheat oven to 400 F.
  2. Toss the parsnips and apple in a bowl with 1 Tbsp oil, sea salt and black pepper. Spread evenly onto a foil-lined bake sheet and roast until fork tender, about 20- 25 minutes.
  3. To make the Pecan Gremelota, toss the shaved Brussels in a small bowl with the pecans, parsley, pomegranate seeds, lemon juice and zest, plus 1 Tbsp olive oil. Season with sea salt and black pepper. Set aside.
  4. Transfer the parsnips and apples to a blender. Add the stock and puree until smooth. Add the maple, and season with more salt and pepper. Pour soup into a large saucepan and heat over medium heat until warmed through.
  5. To serve, spoon into bowls and season with gremolata.

Make the Soup
  1. Prepare your mise en place.
  2. Place water in a sauce pot. Bring to a boil.
  3. Add carrots, kohlrabi and onion to the water. Reduce heat to a simmer and cook until the vegetables are soft
  4. Place a strainer over a bowl. Drain the vegetables into the strainer. Save the liquid.
  5. Place the vegetables in a blender or food processor. Puree until smooth.
  6. Place the puree, the cooking liquid, chicken broth and milk into a saucepot.
  7. Heat to a simmer and cook for 30 minutes
  8. Add coriander, salt and pepper to taste.
Make the Croutons
  1. Preheat oven to 300 degrees.
  2. Place bread into a bowl. Add the oil and toss to coat.
  3. Spread cubes on a parchment-lined sheet tray.
  4. Place pan in the oven and bake until golden brown- about 10-12 minutes.
  5. Garnish soup with croutons. Enjoy!
