Instructions
  1. Whisk juices, garlic paste, salt, and pepper in a large bowl.
  2. While whisking, slowly drizzle in oil until dressing is emulsified; set aside.
  3. Grate kohlrabi and beets using the large holes of a box grater.
  4. Combine all veg in bowl with dressing; toss to combine.
  5. Let salad sit 30 minutes before serving.
  6. Add herbs and mix into slaw.
  7. ENJOY!!

  1. Bring a large pot of water to a rolling boil
  2. Trim off any thick stems from sweet potato greens then add to boiling water and blanch for 60 seconds
  3. Immediately transfer sweet potato greens to a bowl filled with ice water to stop the cooking. Drain
  4. Heat oil in a large pan or wok over medium heat. Add scallions, garlic, ginger, turmeric, peppers, and lemongrass. Stir until fragrant, 1 to 2 minutes. Stir in soy sauce
  5. Add coconut milk and water, then bring to a simmer
  6. Add blanched greens and return to a boil; reduce heat to low and simmer for 2 minutes
  7. Season with salt and pepper to taste, and squeeze of lime.
  8. Spoon into bowls and serve with rice or grain of your choice.

  1. Pre-heat oven to 400 degrees
  2. Coat sweet potatoes and garlic cloves with olive oil, salt, & pepper. Place in a single layer on a baking sheet. Roast 25 minutes, until tender and mildly caramelized
  3. Heat a heavy-bottomed pot over medium heat. Add remaining olive oil & minced shallot. Cook until tender and fragrant, stirring regularly
  4. Fold in kale, followed by the roasted sweet potatoes and garlic cloves
  5. Add veggie stock and heavy cream or coconut milk. Simmer for 5-7 minutes
  6. Blend soup with immersion blender or in blender until smooth
  7. Garnish with sliced scallions and serve with warm, crusty bread. Enjoy!

  1. Preheat oven to 375°F
  2. Lightly grease shallow casserole dish or cake pan with olive oil—set aside
  3. In a sauté pan, add olive oil on medium high heat, then add chopped onions, sauté until golden brown
  4. Add garlic to sauté pan, then add chopped Swiss chard and kale
  5. Once greens are cooked, remove pan from heat and let mixture coo
  6. In mixing bowl, add eggs whites and yolks, milk, salt, pepper, and Parmesan cheese. Whisk mixture until well combined
  7. In casserole dish, add cooked quinoa, then cooked greens, followed by egg mixture
  8. Bake for about 25 minutes, until center is done
  9. Garnish with fresh cherry tomatoes

  1. In a pot of boiling water, cook cut long beans for 5 minutes, until tender to bite.
  2. In a large bowl combine cooked long beans, cucumbers, scallions, tomatoes and cooked grain of choice.
  3. In small bowl whisk garlic, lemon juice, vinegar, mustard, honey, olive oil, and salt
  4. Pour half dressing into salad bowl, toss gently, add lemon basil and rest of dressing and toss again. Enjoy!
