Instructions
Place watermelon, cucumber, scallions, and cilantro in a medium bowl.
Mix dressing ingredients together in a small bowl then pour over watermelon salad.
Gently toss. Add salt and pepper to taste
Garnish with jalapeño, shiso ribbons and toasted sesame seeds

Instructions
Combine black-eyed peas, sweet & hot peppers, cucumber, red onion, green onion, tomatoes, half of the parsley, and fonio/quinoa in a large bowl. Gently toss.
Combine oil, vinegar, tahini, garlic, honey, paprika, salt, and pepper in a small bowl. Whisk well and add water to thin if needed. Taste and add more honey if needed.
Pour vinaigrette over black-eyed pea mixture and stir well. Taste and add more salt or pepper, if needed. Refrigerate at least 1 hour for flavors to meld. Garnish with remaining parsley just before serving.

Combine basil, blueberries, jalapeño, olive oil, salt and pepper in a food processor and pulse until smooth. Set aside.
Place summer greens and cucumber in a large mixing bowl and dress with blueberry dressing. Toss to evenly coat.
serve plain, as a side salad or top with you favorite grilled veggies. Enjoy!

For the sesame soy dressing

Instructions
Place the noodles, radishes, and cucumber into three separate bowls
Transfer to the fridge to chill for at least one hour
For the dressing, whisk all of the dressing ingredients together in a small bowl
To serve, transfer the noodles to a large serving dish, layer with some radish and cucumber and scatter over the black sesame seeds
Spoon the dressing over the noodles and garnish with cilantro sprigs
Serve immediately and enjoy!

Instructions
In a pot of boiling water, cook cut long beans for 5 minutes, until tender to bite.
In a large bowl combine cooked long beans, cucumbers, scallions, tomatoes and cooked grain of choice.
In small bowl whisk garlic, lemon juice, vinegar, mustard, honey, olive oil, and salt
Pour half dressing into salad bowl, toss gently, add lemon basil and rest of dressing and toss again. Enjoy!
