These tortilla cutouts are a distant relative of churros, but aren’t fried! Using heart healthy coconut oil and whole wheat tortillas, make this a fun and healthy activity to do with the entire family!

Instructions
Combine sugar and cinnamon in a small bowl. Mix and set aside.
Melt coconut oil and vanilla in a small pot over low heat.
Meanwhile, punch out tortillas with Halloween cookie cutters. Lay out on a parchment lined sheet tray fitted with a cooling rack. Brush tortillas with oil mixture, flip and brush opposite side. Bake for 8 minutes. Remove from oven and quickly sprinkle sugar mixture over tortilla, flip and sprinkle over other side. Cool completely.

Prepare your mise en place.
Place chickpeas in food processor.
Add lemon juice, garlic, and tahini into food processor.
Blend until almost smooth. Scrape down sides of bowl.
Season with salt and pepper to taste.
If the hummus is too thick, add 1 tablespoon of olive oil.
Sprinkle with paprika. Enjoy!

Prepare your mise en place.
Combine the cream cheese and sour cream in a medium mixing bowl; blend well.
Stir in the cheese, roasted peppers, onion, garlic powder and salt. Chill for 2 hours.
Puree the beans in a food processor or blender.
Spread a thick layer of beans over each tortilla.
Spread the cream cheese mixture over the beans.
Thinly layer the spinach on top of the cream cheese mixture.
Cut into 3/4-inch slices. Enjoy!

Pat dry the edamame with a paper towel. Combine edamame, salt, pepper, and olive oil in large bowl.
