Lima Beans

The lima bean was cultivated in either Guatemala or Peru, and was introduced to Asia and Europe by Portugese explorers shortly after Columbus’ discovery of the Americas.  These starchy, buttery beans are generally cream or green but some varieties may develop beans in red, purple, brown or black shades.
